Description
This Cheesy Twisted Pasta with Creamy Garlic Parmesan Chicken is a rich and comforting dinner perfect for any night of the week. Tender rotini pasta is coated in a silky garlic parmesan sauce and topped with juicy, herb-seasoned chicken. It’s indulgent, balanced, and packed with flavor.
Ingredients
12 oz rotini pasta
2 boneless skinless chicken breasts
2 tablespoons butter
3 cloves garlic, minced
1 cup heavy cream
1 cup grated parmesan cheese
2 tablespoons chopped fresh parsley
1 teaspoon salt
1 teaspoon black pepper
1 pinch red pepper flakes (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook rotini pasta according to package directions until al dente. Drain and reserve 1/2 cup of pasta water.
2. Season chicken breasts with salt, pepper, and parsley or Italian seasoning.
3. In a skillet, melt 1 tablespoon butter over medium heat. Sear chicken for 6–7 minutes per side until golden and fully cooked. Remove and let rest.
4. In the same skillet, melt the remaining tablespoon of butter. Add minced garlic and sauté for 30 seconds until fragrant.
5. Pour in heavy cream and simmer for 2–3 minutes, scraping up any bits from the chicken.
6. Stir in parmesan cheese until melted and smooth. Add red pepper flakes if desired. Adjust seasoning with salt and pepper.
7. Add the cooked rotini to the sauce and toss well. Add reserved pasta water as needed to loosen.
8. Slice the rested chicken and serve it over the creamy pasta. Garnish with more parsley and parmesan.
Notes
For the best sear, don’t overcrowd the skillet when cooking the chicken.
Use freshly grated parmesan for the smoothest, creamiest sauce.
A splash of reserved pasta water helps blend the sauce and pasta beautifully.
