Ingredients
2 pounds potatoes, thinly sliced
3 cloves garlic, minced
2 cups heavy cream
2 cups shredded cheddar cheese
2 tablespoons butter
1 teaspoon fresh thyme leaves
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 375°F (190°C) and butter a medium baking dish.
2. In a saucepan, combine heavy cream, garlic, thyme, salt, and pepper. Simmer gently for 5 minutes. Discard thyme sprigs.
3. Thinly slice the potatoes evenly using a mandoline or knife.
4. Layer the potatoes in the dish, pouring cream and sprinkling cheese between each layer. Top with extra cheese and dot with butter.
5. Cover with foil and bake for 40 minutes. Uncover and bake another 20 minutes until golden and bubbly.
6. Let rest for 10 minutes before serving.
Notes
