These Candy Cane Brownie Bites are a rich and festive easy recipe made with fudgy brownie bases, fluffy peppermint frosting, and crushed candy canes on top. 2 large eggs

1/2 cup all-purpose flour

1/2 cup mini chocolate chips

4 ounces cream cheese, softened

1 1/2 cups powdered sugar

1/2 teaspoon peppermint extract

1 tablespoon heavy cream

2 tablespoons crushed candy canes

1 drop red food coloring, optional


Instructions

1. Preheat the oven to 350°F and lightly grease a mini muffin pan.

2. In a mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.

3. Add the eggs and vanilla extract, then whisk until glossy.

4. Stir in the cocoa powder, flour, and salt until just combined.

5. Fold in the mini chocolate chips.

6. Spoon the batter into the mini muffin pan, filling each cup about three-quarters full.

7. Bake for 12 to 15 minutes, until the tops are set and a toothpick comes out with a few moist crumbs.

8. Cool the brownie bites in the pan for 10 minutes, then transfer to a wire rack to cool completely.

9. Beat the cream cheese until smooth.

10. Mix in the powdered sugar, peppermint extract, and heavy cream until fluffy.

11. Add the red food coloring if using and mix until evenly tinted.

12. Pipe or spoon the frosting onto the cooled brownie bites.

13. Sprinkle crushed candy canes over the top and serve.


Notes

Let the brownie bites cool completely before frosting so the topping stays fluffy and neat.

Do not overbake or the brownie bites can lose their fudgy texture.
