These Brown Sugar Toffee Truffles are rich, buttery, and irresistibly smooth. With a soft brown sugar center, crunchy toffee bits, and a creamy caramel or butterscotch coating, these bite-sized delights are perfect for gifting or indulging any day of the week.
Ingredients
1 cup brown sugar
½ cup unsalted butter (softened)
1 ½ cups powdered sugar
1 teaspoon vanilla extract
½ cup toffee bits
12 ounces caramel melting wafers or butterscotch chips
Sea salt (optional, for garnish)
Instructions
1. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
2. Mix in the vanilla extract.
3. Gradually add the powdered sugar, mixing well after each addition until the dough is thick and pliable.
4. Fold in the toffee bits until evenly distributed.
5. Roll the mixture into tablespoon-sized balls and place them on a parchment-lined tray.
6. Refrigerate for 30 to 45 minutes until firm.
7. Melt the caramel wafers or butterscotch chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
8. Dip each chilled truffle into the melted coating and let excess drip off.
9. Place coated truffles back on the parchment.
10. While coating is still wet, sprinkle with sea salt if using.
11. Let the coating set completely at room temperature or chill briefly to speed up the process.
12. Store in the fridge in an airtight container for up to 2 weeks.
Notes
Let truffle dough rest at room temperature for 2–3 minutes before rolling to prevent crumbling.
Avoid overheating the coating chips—stir frequently to keep it smooth.
For added depth, fold in a tablespoon of bourbon or spiced rum to the dough (optional).
