1 tablespoon olive oil

1 teaspoon kosher salt

1/2 teaspoon black pepper

4 tablespoons butter

1 cup shredded cheddar cheese

Instructions

1. Scrub the potatoes well under running water and dry them completely with a clean kitchen towel.
