8 slices bacon

2 tablespoons butter

1 small onion, diced

3 cloves garlic, minced

3 cups cooked shredded chicken

4 cups chicken broth

1 bag frozen shredded hash browns, 20 ounces

1 packet ranch seasoning mix, 1 ounce

8 ounces cream cheese, softened

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Cook the bacon in a large pot over medium heat until crispy. Remove the bacon and set it aside, leaving about 1 tablespoon of drippings in the pot.

2. Add the butter, diced onion, and minced garlic to the pot. Cook for 3 to 4 minutes until the onion is softened.

3. Stir in the shredded chicken, chicken broth, frozen hash browns, and ranch seasoning mix. Bring to a gentle boil.

4. Reduce the heat and simmer for 15 to 20 minutes, until the potatoes are tender.

5. Add the softened cream cheese and stir until fully melted and smooth.

6. Pour in the heavy cream and stir to combine.

7. Add the shredded cheddar cheese a little at a time, stirring until melted.

8. Season with salt and black pepper.

9. Serve hot topped with crispy bacon and fresh parsley.


Notes

Use softened cream cheese so it melts smoothly into the broth.

Shred your own cheddar for the best melting texture.
