This BBQ Cheddar Meatloaf is a cheesy, tangy twist on a traditional comfort food classic. Packed with juicy ground beef, melty cheddar, and topped with a sticky BBQ glaze, it’s a family-friendly dinner that’s both easy to make and wildly satisfying.
Ingredients
1 ½ pounds ground beef
1 cup shredded cheddar cheese
½ cup BBQ sauce, divided
¾ cup breadcrumbs
2 large eggs
½ cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
2 tablespoons fresh parsley, chopped
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
2. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, salt, pepper, and ¼ cup of the BBQ sauce. Mix until just combined.
3. Fold in shredded cheddar cheese evenly throughout the mixture.
4. Transfer the mixture to your prepared baking sheet or loaf pan and shape it into a loaf.
5. Spread the remaining ¼ cup of BBQ sauce evenly over the top.
6. Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
7. Let rest for 10 minutes before slicing. Garnish with chopped parsley and serve.
