2 cups cooked jasmine rice

1 tsp garlic powder

1/4 tsp black pepper

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tbsp sriracha

1 tbsp honey

1 tbsp lime juice

1 cup shredded carrots

1 cup shredded purple cabbage

1 cup diced cucumber

2 green onions, sliced


Instructions

1. Cook the jasmine rice according to package directions and keep warm.

2. Pat the salmon dry, cut it into cubes, and toss with olive oil, paprika, garlic powder, salt, and black pepper.

3. Arrange the salmon on a baking sheet or in a hot skillet and cook until golden outside and tender inside.

4. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.

5. Prepare the carrots, cabbage, cucumber, and green onions while the salmon cooks.

6. Divide the warm rice between bowls and top with cooked salmon and fresh vegetables.

Notes

Use dry salmon pieces so they roast or sear properly and develop better color.
