Ingredients
Scale
2 medium zucchini, grated
2 large eggs
1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese
2 green onions, finely sliced
2 cloves garlic, minced
1/2 teaspoon salt

Oil for frying (vegetable or canola)
Instructions
- Grate the zucchini using the coarse side of a box grater. Place in a clean towel and squeeze out as much liquid as possible.
- In a large bowl, mix the drained zucchini with eggs, flour, Parmesan, green onions, garlic, salt, and pepper until combined.
- Heat a thin layer of oil in a skillet over medium heat.
- Drop spoonfuls of the batter into the skillet, flattening slightly with the back of the spoon. Fry for 3–4 minutes per side, until golden and crisp.
- Transfer to a paper towel-lined plate to drain. Serve warm with sour cream or herbs.
