White Bolognese Pasta is a creamy, comforting twist on the traditional tomato-based sauce. Made with a luxurious combination of ground meat, white wine, and cream, it’s a refined yet cozy dinner option that’s easy to make and irresistibly delicious.

1 tablespoon olive oil
1 tablespoon unsalted butter
1 small onion, finely diced
1 celery stalk, finely diced
1 carrot, finely diced
3 garlic cloves, minced
1 pound ground beef or beef/pork mix
1/2 cup dry white wine
3/4 cup whole milk
3/4 cup heavy cream
1/8 teaspoon ground nutmeg
1/2 cup grated Parmesan cheese (plus more for garnish)
Salt and pepper, to taste
12 oz fettuccine or tagliatelle
Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil and butter over medium heat.
- Add onion, celery, and carrot; sauté until soft (6–8 minutes).
- Stir in garlic and cook for another 1 minute.
- Add ground meat, break it up, and cook until browned.
- Pour in white wine and deglaze the pan. Simmer until reduced by half.
- Stir in milk and simmer for 10 minutes.
- Add cream and nutmeg. Simmer for 15–20 minutes, stirring occasionally.
- Stir in Parmesan. Season with salt and pepper.
- Cook pasta according to package instructions. Reserve some pasta water.
- Drain pasta and toss with sauce, adding reserved water if needed.
- Serve hot with fresh parsley and extra Parmesan.
