Description
White Bolognese Pasta is a creamy, comforting twist on the classic Italian dish, combining ground pork and beef with a velvety white sauce of cream, Parmesan, and aromatics. It’s an indulgent meal perfect for cozy dinners or impressing guests.
Ingredients
250g ground pork
250g ground beef
1 onion, finely chopped
1 carrot, finely chopped
2 celery stalks, finely chopped
3 cloves garlic, minced
2 tbsp butter
1 tbsp olive oil
1/2 cup white wine
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 tsp nutmeg
400g tagliatelle or fettuccine
2 tbsp chopped fresh thyme or parsley
Salt and pepper to taste
Instructions
1. Heat butter and olive oil over medium heat. Add onion, carrot, and celery; sauté 8-10 minutes until soft. Stir in garlic, cook 1 minute.
2. Add ground pork and beef; cook until browned and no longer pink. Season with salt, pepper, and nutmeg.
3. Pour in white wine; simmer until reduced by half. Stir in cream; simmer 15-20 minutes until thickened.
4. Cook pasta in salted water until al dente. Reserve 1 cup pasta water, then drain.
5. Toss pasta with sauce, adding reserved water as needed. Stir in Parmesan and herbs. Serve with extra Parmesan.
Notes
For a lighter version, use ground chicken or turkey and replace heavy cream with half-and-half.
Freshly grated nutmeg gives the sauce extra warmth—don’t skip it!
Reserve pasta water to adjust sauce consistency before serving.
