Description

A warm and toasty breakfast sandwich that went viral for good reason—runny yolk, melty cheese, herbs, and a golden English muffin come together in a ridiculously satisfying bite.


Ingredients

2 large eggs

1 English muffin, halved and toasted

1 teaspoon butter or oil

1 pinch kosher salt

1 pinch black pepper

1 pinch red pepper flakes (optional)

1 teaspoon fresh herbs like chives or parsley (optional)

1 slice cheddar or American cheese (optional)


Instructions

1. Slice the English muffin and toast until golden. Set aside.

2. Heat a nonstick skillet over medium-low and add butter or oil.

3. Crack eggs into the skillet and cook until whites are set but yolks are still runny. Cover the pan briefly if needed.

4. Season the eggs with salt, pepper, and red pepper flakes. Add herbs if using.

5. Place cheese slice over eggs and cover briefly to melt.

6. Place eggs on toasted muffin base. Top with the second muffin half. Serve warm and enjoy.


Notes

Cover the skillet with a lid for the last minute to perfectly set egg whites without overcooking the yolk.
