Description

This Blueberry Lemon Cheesecake Puppy Chow Treat is a no-bake snack mix bursting with tangy lemon zest, creamy cheesecake flavor, and crunchy Chex cereal, all tied together with a sweet white chocolate coating and pops of freeze-dried blueberries. It’s perfect for gifting, parties, or snacking right from the bowl—easy to make and impossible to resist!


Ingredients

6 cups Chex cereal (rice or corn)

1 cup white chocolate chips

2 tablespoons unsalted butter

1 teaspoon lemon extract

1 teaspoon lemon zest

2 tablespoons cream cheese powder

1 ½ cups powdered sugar

½ cup freeze-dried blueberries


Instructions

1. Place Chex cereal in a large mixing bowl and line a baking sheet with parchment paper.

2. In a microwave-safe bowl, combine white chocolate chips and butter. Heat in 30-second intervals, stirring in between, until fully melted and smooth.

3. Stir lemon extract, lemon zest, and cream cheese powder into the melted mixture until fully dissolved.

4. Pour the melted cheesecake mixture over the Chex cereal and gently fold with a spatula until all cereal is evenly coated.

5. Transfer the coated cereal into a large zip-top bag, add powdered sugar, seal the bag, and shake until fully coated.

6. Gently fold in the freeze-dried blueberries once the mix has cooled slightly.

7. Spread the finished mix on a parchment-lined baking sheet to cool and set for about 20 minutes.

8. Once cooled, transfer to an airtight container or serve immediately.


Notes

Be sure to work quickly when mixing the chocolate coating—Chex can break if over-stirred once the chocolate starts cooling.

Store the mix in a cool, dry place to prevent the powdered sugar from melting or clumping.

Add more lemon zest for an extra citrus punch or swap blueberries for freeze-dried raspberries for a twist.
