Description

This Traditional Watergate Fruit Salad with Pistachios is a vintage no-bake dessert packed with creamy pistachio flavor, juicy pineapple, and colorful marshmallows. A refreshing and whimsical dish perfect for holidays, potlucks, or any time you’re craving retro comfort.

Ingredients

Scale

1 package instant pistachio pudding mix (3.4 oz)

1 can crushed pineapple with juice (20 oz)

2 cups mini marshmallows

1 container whipped topping (8 oz, like Cool Whip)

1/2 cup chopped pistachios or pecans

10 maraschino cherries, halved (optional)

Instructions

1. In a large mixing bowl, stir together the instant pistachio pudding mix and crushed pineapple with its juice until the pudding dissolves.

2. Gently fold in the whipped topping until the mixture becomes light and creamy.

3. Add the mini marshmallows and fold to combine evenly.

4. Stir in the chopped pistachios (or pecans), reserving a tablespoon for garnish.

5. Cover and refrigerate for at least 1 hour to allow flavors to meld.

6. Before serving, garnish with maraschino cherry halves and the reserved chopped nuts.

Notes

Chill the salad overnight for deeper flavor and fluffier texture.

You can substitute pecans for pistachios if you prefer a milder nutty bite.

Make sure to use *instant* pudding mix—cook-and-serve won’t set correctly.
