1 cup water
1/4 cup unsalted butter
1 tablespoon sugar
1/4 teaspoon salt
1 cup all-purpose flour
4 large eggs
Neutral oil for frying (vegetable or canola)
Powdered sugar, for dusting
Instructions
- In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil.
- Add flour all at once and stir until the dough forms a ball and pulls from the sides.
- Transfer dough to a bowl and let cool for 5–10 minutes.
- Beat in eggs one at a time until smooth and glossy.
- Heat oil to 375°F (190°C) in a heavy-bottomed pot.
- Drop spoonfuls of dough into the hot oil and fry 4–5 minutes until golden and puffed.
- Remove and drain on paper towels. Dust with powdered sugar and serve warm.
