Description

This easy and flavorful turkey gravy is rich, smooth, and perfect for the holidays or cozy comfort meals. Made with or without drippings, it’s flexible and always delicious with turkey, mashed potatoes, stuffing, and more.


Ingredients

2 to 3 tablespoons turkey drippings or butter

1/4 cup all-purpose flour

2 cups turkey or chicken stock (low-sodium)

1/2 cup strained turkey drippings (optional)

1 to 2 teaspoons fresh herbs (thyme, sage, or rosemary)

1/4 to 1/2 teaspoon salt (to taste)

1/4 teaspoon ground black pepper

1/2 teaspoon Worcestershire sauce (optional)

2 tablespoons heavy cream (optional)


Instructions

1. After roasting the turkey, pour drippings into a heatproof container. Let the fat rise, then skim off all but 2 to 3 tablespoons.

2. In a saucepan over medium heat, melt the fat or butter. Whisk in the flour to form a roux. Cook for 2–3 minutes, stirring constantly.

3. Slowly whisk in the stock to avoid lumps, followed by the strained drippings if using.

4. Bring to a simmer and cook for 5–7 minutes, stirring until thickened.

5. Stir in chopped herbs, salt, pepper, and Worcestershire sauce if using.

6. For a richer gravy, add heavy cream at the end.

7. Optional: strain through a fine mesh sieve for a silky finish.


Notes

Use unsalted butter and low-sodium stock to control saltiness.

Whisk continuously to avoid lumps and achieve the smoothest texture.

You can double this recipe easily—just scale up all ingredients equally.
