Ingredients
1 lb shrimp, peeled and deveined
4 cloves garlic, minced
4 tbsp unsalted butter
1 tbsp olive oil
1 tbsp lemon juice
1/2 tsp red pepper flakes (optional)
2 tbsp fresh parsley, chopped
2 cups cooked jasmine or basmati rice
1 tbsp fresh or dried herbs (thyme, dill, or parsley)
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Cook rice according to package instructions. Fluff and stir in herbs, salt, and a drizzle of olive oil. Set aside.
2. Pat shrimp dry and season with salt, pepper, and red pepper flakes.
3. In a skillet over medium heat, melt butter with olive oil.
4. Add garlic and sauté for 1 minute until fragrant but not browned.
5. Add shrimp to skillet in a single layer. Cook 2-3 minutes per side until pink and opaque.
6. Squeeze in lemon juice and toss shrimp in the garlic butter sauce.
7. Plate rice into bowls, top with shrimp, drizzle sauce, and garnish with chopped parsley and lemon wedges.
Notes
Be sure not to overcook the shrimp; they turn rubbery quickly.
Fresh herbs make a difference, but dried herbs work well in a pinch.
