Ingredients
8 oz Velveeta cheese, cubed
1 cup sharp cheddar cheese, freshly shredded
1 cup Monterey Jack cheese, freshly shredded
3/4 cup whole milk or heavy cream
1/2 tsp garlic powder
1 tsp Dijon mustard
1 tsp cornstarch (optional)
1 tbsp chopped chives or green onion (optional)
Instructions
1. In a medium saucepan, heat the milk and Dijon mustard over low to medium heat until warm (do not boil).
2. Add cubed Velveeta and stir constantly until melted and smooth.
3. Stir in garlic powder and cornstarch if using. Add a pinch of salt if needed.
4. Reduce heat to low and slowly stir in shredded cheddar and Monterey Jack, one handful at a time, until fully melted.
5. Pour dip into a serving dish. Optionally broil for 1–2 minutes until the top is golden.
6. Garnish with chopped chives or green onion and serve warm with pretzels, chips, or veggies.
Notes
Use freshly shredded cheese for the creamiest texture—pre-shredded can make the dip grainy.
Cornstarch helps the dip stay smooth if reheated later—optional but recommended.
To keep warm longer at parties, transfer to a mini slow cooker or fondue pot.
