Description

Ingredients

1 cup all-purpose flour

1 cup granulated sugar

1 cup brown sugar

1 cup chopped pecans

2 large eggs

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1/4 cup milk


Instructions

1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.

2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.

3. In a separate bowl, beat the eggs. Stir in vegetable oil, milk, and vanilla extract until well combined.

4. Combine wet and dry mixtures, stirring just until mixed. Fold in chopped pecans gently.

5. Pour batter into prepared pan and smooth the top. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.

6. Optional: While warm, drizzle a glaze made with powdered sugar and milk over the top. Let it soak in slightly before slicing.


Notes

For extra nutty flavor, toast the pecans in the oven at 350°F for 5–7 minutes before adding to the batter.

Do not overmix the batter—this keeps the bread tender and soft.

The glaze is optional but adds a delightful sweet finish and a touch of Southern charm.
