Description

2 cups all-purpose flour

1 cup brown sugar

1/2 cup granulated sugar

3 large eggs

3/4 cup vegetable oil

1 cup unsweetened applesauce

1/2 cup buttermilk

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon ground ginger

2 teaspoons vanilla extract

8 ounces cream cheese, softened

1/2 cup unsalted butter, softened

3 cups powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon


Instructions

1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.

2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.

3. In a separate bowl, beat eggs, brown sugar, and granulated sugar until creamy.

4. Add vegetable oil, applesauce, buttermilk, and vanilla extract to the wet mixture and mix until combined.

5. Gradually add dry ingredients to wet, mixing until just combined—do not overmix.

6. Pour batter into prepared pan and smooth the top. Bake for 30–35 minutes or until a toothpick inserted comes out clean.

7. Let the cake cool completely before frosting.

8. To make frosting: beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and cinnamon. Beat until fluffy.

9. Spread frosting generously over the cooled cake. Slice and serve!


Notes

Let the cake cool completely before frosting to prevent melting.

Use full-fat cream cheese for the creamiest frosting.

For cupcakes, reduce baking time to 18–22 minutes and fill liners 2/3 full.
