Ingredients
Ricotta cheese
Shredded mozzarella or fontina
Sun-dried tomatoes
Fresh spinach
Garlic (optional)
Butter
Thick-cut bread (sourdough or Italian recommended)
Instructions
- Sauté the Spinach: In a skillet over medium heat, cook spinach in a bit of olive oil or butter until wilted. Optionally, add minced garlic near the end. Set aside.
- Prepare Ricotta: In a bowl, season ricotta with salt and pepper. Stir in grated Parmesan if desired.
- Assemble: Butter one side of each bread slice. On the unbuttered side, spread ricotta, top with spinach, sun-dried tomatoes, and shredded cheese. Close with another slice, butter side out.
- Grill: Heat a skillet or panini press over medium. Cook sandwiches 3-4 minutes per side until golden brown and cheese is melted.
- Serve: Let rest briefly, then slice and serve hot.
