These Mediterranean-inspired burgers are packed with savory flavor thanks to juicy ground chicken, tangy sun-dried tomatoes, fresh spinach, and creamy feta. Topped with cool tzatziki sauce, they make for a refreshing yet indulgent lunch or dinner.
Ingredients
1 lb ground chicken
1/2 cup sun-dried tomatoes, finely chopped
1/3 cup crumbled feta cheese
1 cup fresh spinach, wilted and chopped
2 cloves garlic, minced
1/4 cup onion, finely chopped
1 teaspoon dried oregano
1/2 teaspoon dried dill
1/3 cup panko breadcrumbs
1 large egg
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for cooking)
1/2 cup tzatziki sauce
4 burger buns
Tomato slices, fresh spinach, and red onion for topping
Instructions
1. Chop sun-dried tomatoes and spinach. Sauté spinach until wilted and let cool. Mince garlic and onion.
2. In a large bowl, mix together ground chicken, sun-dried tomatoes, feta, spinach, garlic, onion, oregano, dill, breadcrumbs, egg, salt, and pepper until just combined.
3. Form into 4 even-sized patties, about 1/2 inch thick. Chill for 10–15 minutes if mixture is sticky.
4. Heat olive oil in a skillet over medium heat. Cook patties for 4–5 minutes per side or until golden and cooked through (165°F internal temp).
5. Toast the buns in the same pan or on the grill until golden.
6. Assemble burgers with tzatziki sauce, baby spinach, tomato slices, red onion, and top bun. Serve immediately.
Notes
For best texture, avoid over-mixing the burger mixture.
Use a meat thermometer to ensure patties reach 165°F internally.
Tzatziki sauce can be swapped with hummus or garlic aioli for a twist.
