This Summer Tortellini Salad is a vibrant, refreshing mix of tender cheese tortellini, juicy cherry tomatoes, crisp cucumbers, briny olives, and tangy feta—all tossed in a zesty Italian vinaigrette. It’s perfect for BBQs, potlucks, or an easy weekday lunch.
Ingredients
12 oz cheese tortellini
1 cup cherry tomatoes, halved
1 cup cucumber, sliced
1/4 cup red onion, thinly sliced
1/3 cup kalamata olives, pitted and halved
1/2 cup feta cheese, cubed
2 tablespoons fresh basil, chopped
1/3 cup Italian vinaigrette
1/2 teaspoon cracked black pepper
Instructions
1. Bring a large pot of salted water to a boil. Cook tortellini according to package instructions until al dente.
2. Drain tortellini and rinse under cold water to cool.
3. Halve the cherry tomatoes, slice the cucumbers and red onion, cube the feta, and chop the basil.
4. In a large bowl, combine the tortellini, tomatoes, cucumber, onion, olives, and feta.
5. Drizzle with Italian vinaigrette and toss to coat evenly.
6. Sprinkle with cracked black pepper.
7. Refrigerate for 30 minutes before serving to enhance flavors.
Notes
For the freshest result, add basil just before serving.
Use refrigerated tortellini for best texture.
