Ingredients
3 very ripe bananas
2 large eggs
1/2 cup unsweetened Greek yogurt
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup chopped walnuts (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
2. In a large mixing bowl, mash bananas until mostly smooth.
3. Whisk in eggs, Greek yogurt, and vanilla extract.
4. In a separate bowl, mix flour, baking soda, salt, and cinnamon.
5. Add dry ingredients to the wet mixture and stir until just combined.
6. Fold in walnuts if using.
7. Pour batter into prepared loaf pan and smooth the top.
8. Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
9. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
10. Slice and serve!
Notes
Use bananas with lots of brown spots for maximum sweetness.
Do not overmix the batter—stir just until combined.
For extra richness, toast the walnuts before folding them in.
