Ingredients
1 pound ground beef
1 cup diced green bell pepper
1 cup diced red bell pepper
1 medium yellow onion, diced
3 cloves garlic, minced
4 cups beef broth
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes with juices
3/4 cup orzo pasta
1 tablespoon Italian seasoning
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. In a large soup pot, heat a drizzle of olive oil over medium heat. Add the ground beef and cook until browned.
2. Add the diced onion and minced garlic, cooking until softened.
3. Stir in diced bell peppers and cook for about 5 minutes.
4. Add Italian seasoning, salt, and black pepper; stir to combine.
5. Pour in the beef broth, tomato sauce, and diced tomatoes. Add the bay leaf. Bring to a boil, then reduce heat and simmer for 15 minutes.
6. Stir in the orzo and continue simmering for 10 minutes, or until orzo is tender. Stir occasionally.
7. Remove the bay leaf, adjust seasoning if needed, and garnish with chopped parsley before serving.
Notes
For a thicker texture, allow the soup to sit for 10 minutes before serving.
To reduce grease, use lean ground beef or drain excess fat after browning.
Add more broth when reheating as orzo continues to absorb liquid.
