Description

These golden-brown hens are individually portioned and packed with aromatic stuffing made from herbs, garlic, and your choice of bread or rice. Perfect for intimate holiday meals or a cozy weekend dinner.


Ingredients

2 Cornish game hens

1 small onion, diced

3 cloves garlic, minced

2 tablespoons butter

1 cup bread cubes or 1 cup cooked rice

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 tablespoon olive oil

1 lemon, sliced

1 cup chicken broth

1 teaspoon salt

1 teaspoon black pepper


Instructions

1. In a skillet, melt butter and sauté onion and garlic until fragrant.

2. Stir in bread cubes or rice, fresh herbs, salt, pepper, and chicken broth. Cook until the mixture is moist but not soggy. Let it cool.

3. Preheat oven to 375°F (190°C). Pat the hens dry.

4. Gently separate the skin from the breast and insert some butter and herbs underneath.

5. Stuff each hen with the cooled stuffing. Tie the legs with kitchen twine.

6. Rub each hen with olive oil and season the skin with salt, pepper, and herbs. Add lemon slices for flavor.

7. Place hens on a rack in a roasting pan. Roast for 50–60 minutes, basting occasionally. Internal temp should be 165°F.

8. Rest for 10 minutes before serving.


Notes

Don’t overstuff the hens; loosely fill the cavity to allow even cooking.

Always let the hens rest after roasting to retain juices.

For added richness, brush with melted butter halfway through roasting.
