2 cups crushed frosted animal cookies

1/4 cup melted butter

Cheesecake Filling

24 oz cream cheese, softened

3/4 cup granulated sugar

1 cup sour cream

3 large eggs

1/4 cup strawberry puree

1 tsp vanilla extract

1 cup crushed frosted animal cookies

Topping

Whipped cream

Extra crushed animal cookies

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, combine crushed animal cookies and melted butter. Press the mixture into the bottom of the prepared pan to form the crust. Bake for 10 minutes and let cool.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add sour cream and mix well.
  4. Add eggs one at a time, beating just until combined. Stir in strawberry puree and vanilla extract.
  5. Gently fold in the crushed frosted animal cookies.
  6. Pour the cheesecake mixture over the prepared crust and smooth the top.
  7. Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door cracked for 1 hour.
  8. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
