4 boneless, skinless chicken thighs or breasts
1 cup long-grain white rice (uncooked)
1 (10.5 oz) can cream of chicken soup
1 3/4 cups chicken broth
1 (1 oz) packet dry onion soup mix
1/2 cup (1 stick) unsalted butter, sliced into pats
Fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Spread uncooked rice evenly across the bottom of the dish.
- In a separate bowl, mix the chicken broth and cream of chicken soup. Pour mixture over rice.
- Arrange chicken pieces over the rice layer.
- Sprinkle onion soup mix evenly on top.
- Distribute butter pats across the surface.
- Cover tightly with foil and bake for 45 minutes.
- Uncover and bake for an additional 15-20 minutes until chicken is fully cooked and rice is tender.
- Rest for 5 minutes. Garnish with fresh parsley before serving, if desired.
