4 boneless, skinless chicken thighs or breasts

1 cup long-grain white rice (uncooked)

1 (10.5 oz) can cream of chicken soup

1 3/4 cups chicken broth

1 (1 oz) packet dry onion soup mix

1/2 cup (1 stick) unsalted butter, sliced into pats

Fresh parsley (optional, for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Spread uncooked rice evenly across the bottom of the dish.
  3. In a separate bowl, mix the chicken broth and cream of chicken soup. Pour mixture over rice.
  4. Arrange chicken pieces over the rice layer.
  5. Sprinkle onion soup mix evenly on top.
  6. Distribute butter pats across the surface.
  7. Cover tightly with foil and bake for 45 minutes.
  8. Uncover and bake for an additional 15-20 minutes until chicken is fully cooked and rice is tender.
  9. Rest for 5 minutes. Garnish with fresh parsley before serving, if desired.
