Description

Golden, buttery chicken baked over fluffy rice, soaked in savory broth and herbs. An easy, comforting one-pan dinner that’s perfect for any night of the week.


Ingredients

2 boneless skinless chicken breasts

1 cup long grain rice (uncooked)

2 cups chicken broth

1 stick butter (unsalted)

1 teaspoon Italian seasoning

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon pepper


Instructions

1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2. Spread uncooked rice evenly in the dish.

3. Place chicken breasts on top of the rice.

4. Pour chicken broth over rice and chicken.

5. Sprinkle Italian seasoning, garlic powder, salt, and pepper evenly.

6. Slice butter into pats and scatter on top.

7. Cover dish tightly with foil and bake 45-50 minutes.

8. Remove foil and bake another 10-15 minutes until chicken is cooked through and rice is fluffy.

9. Let rest 5 minutes before serving.


Notes

For juicier meat, you can swap in boneless chicken thighs.

Make sure to use long grain rice — instant rice will turn mushy.

Add a splash of broth when reheating to keep it moist.
