Ingredients
1 ½ pounds flank or skirt steak
2 tablespoons olive oil
2 tablespoons lime juice
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon black pepper
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 medium yellow onion, thinly sliced
8 small flour or corn tortillas
¼ cup chopped fresh cilantro

Instructions
1. In a large bowl or zip-top bag, combine olive oil, lime juice, garlic, cumin, salt, and pepper. Add steak and toss to coat. Marinate for 30 minutes to 2 hours.
2. Slice bell peppers and onions into thin strips.
3. Heat a large skillet over medium-high heat. Sear marinated steak strips in a single layer for 2-3 minutes per side. Remove and set aside.
4. In the same skillet, add more oil if needed. Cook peppers and onions for 5-7 minutes until tender and slightly charred.
