Ingredients
1 lb ribeye or sirloin steak, cut into bite-sized pieces
10 oz rotini pasta
1 tablespoon olive oil
2 tablespoons butter (divided)
3 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
1/3 cup sun-dried tomatoes, chopped
1/4 teaspoon red pepper flakes (optional)
2 tablespoons fresh parsley, chopped
1/2 teaspoon salt (plus more for pasta water)
1/4 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil. Cook the rotini pasta until al dente, then drain and reserve 1/2 cup of pasta water.
2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Season steak with salt and black pepper.
3. Sear steak bites in batches, cooking for about 2–3 minutes per side until browned and medium rare. Remove from skillet and set aside.
4. In the same skillet, reduce heat to medium and add remaining butter. Sauté garlic until fragrant (about 30 seconds), then stir in sun-dried tomatoes and red pepper flakes.
5. Pour in the heavy cream and bring to a gentle simmer. Stir continuously.
6. Add parmesan cheese gradually, stirring until melted and sauce is smooth. Thin with reserved pasta water if needed.
7. Add cooked rotini to the sauce and toss to coat evenly.
8. Return steak bites to the skillet, including any juices. Toss gently to combine.
9. Finish with chopped parsley and adjust seasoning if necessary. Serve immediately with extra parmesan if desired.
Notes
Let the steak rest for 5 minutes after cooking to keep it juicy when added back to the sauce.
For a thinner sauce, use some of the reserved pasta water to loosen it after adding the cheese.
If you want to boost flavor, try adding a splash of white wine right after sautéing the garlic.
