Ingredients

12 oz rotini pasta

1 lb sirloin steak, cut into bite-sized cubes

1 tablespoon olive oil

1 tablespoon butter

3 garlic cloves, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

1 tablespoon chopped parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Add rotini and cook until al dente according to package directions. Drain and set aside.

2. In a skillet over medium-high heat, add olive oil. Season steak cubes with salt and pepper. Sear steak bites for 2–3 minutes on each side until browned and cooked through. Remove and set aside.

3. In the same skillet, reduce heat to medium and melt the butter. Add minced garlic and sauté for 1 minute until fragrant.

4. Pour in the heavy cream and simmer for 2–3 minutes, stirring occasionally.

5. Stir in the Parmesan cheese until melted and smooth. Add crushed red pepper flakes if using.

6. Toss the cooked rotini into the sauce. Stir and simmer for another minute to allow pasta to absorb the flavors.

7. Return the steak bites to the pan and stir gently to combine.

8. Garnish with chopped parsley before serving.


Notes

For the most tender result, choose sirloin or tenderloin and sear quickly over high heat.

Freshly grated Parmesan melts better and gives a smoother sauce than pre-shredded.

A splash of pasta water can help loosen the sauce if it becomes too thick when reheating.
