Ingredients
4 salmon fillets
3 cups fresh spinach
1/2 cup crumbled feta cheese
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon lemon juice
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat the oven to 400°F (200°C).
2. Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
3. Add spinach and cook until wilted, about 2–3 minutes. Remove from heat and stir in crumbled feta.
4. Slice a pocket into the side of each salmon fillet, being careful not to cut all the way through.
5. Season the salmon with salt, pepper, oregano, and thyme.
6. Stuff each fillet with the spinach-feta mixture.
7. In an oven-safe skillet, heat a drizzle of olive oil over medium-high heat.
8. Sear salmon skin-side down for 2–3 minutes, flip, and sear the other side for 1–2 minutes.
9. Transfer skillet to oven and bake for 8–10 minutes until salmon flakes easily.
10. Squeeze lemon juice over fillets and serve hot.
Notes
Use thick center-cut salmon fillets to hold the filling better and prevent breakage.
If using frozen spinach, thaw and squeeze out all moisture before mixing.
To reheat, add a splash of water and cover to maintain moisture.
