4 boneless skinless chicken breasts
1 cup fresh spinach, chopped
1/2 cup artichoke hearts, drained and chopped
4 oz cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
Salt and pepper to taste
1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix cream cheese, spinach, artichokes, mozzarella, Parmesan, garlic, salt, and pepper until well combined.
- Cut a pocket into each chicken breast without slicing all the way through.
- Season the chicken with salt and pepper.
- Spoon the spinach-artichoke filling into each pocket and secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet and sear the stuffed chicken on both sides until golden, about 3-4 minutes per side.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches 165°F (74°C).
- Let rest a few minutes before serving.
