Description

A cozy, flavor-packed one-pot soup made with spicy Italian sausage, creamy cannellini beans, tender vegetables, and hearty greens. Perfect for chilly nights or meal prep, this satisfying dish is easy to make, naturally gluten-free, and great for freezing.


Ingredients

1 pound spicy Italian sausage, uncased

2 tablespoons olive oil

1 small yellow onion, diced

2 carrots, peeled and diced

2 celery stalks, diced

3 garlic cloves, minced

4 cups chicken broth

1 can (14.5 ounces) crushed tomatoes

2 cans (15 ounces each) cannellini beans, drained and rinsed

2 cups kale or spinach, chopped

1 teaspoon chopped fresh thyme

1 teaspoon chopped fresh rosemary

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Parmesan cheese and parsley for garnish (optional)


Instructions

1. Heat a large pot over medium heat and add olive oil. Brown the Italian sausage, breaking it up as it cooks. Once fully cooked and slightly crispy, remove it with a slotted spoon and set aside.

2. In the same pot, add more olive oil if needed. Sauté onion, carrots, and celery for 5-7 minutes until soft. Add garlic and cook for 1 minute more.

3. Pour in chicken broth and crushed tomatoes. Deglaze the pot by scraping up any browned bits. Return sausage to the pot.

4. Add cannellini beans, fresh herbs, and red pepper flakes. Bring to a boil, then reduce to a simmer and cook uncovered for 20-25 minutes.

5. Stir in chopped kale or spinach and let it wilt for about 5 minutes.

6. Season with salt and pepper to taste. Ladle into bowls, garnish if desired, and serve hot.


Notes

Brown the sausage well to create flavorful fond at the bottom of the pot—this deepens the broth’s richness.

For a thicker soup, mash a few beans with a spoon before adding greens.

Freeze in individual portions for quick, satisfying meals later.
