1 pound shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons fresh lime juice

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon paprika

1 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

8 small tortillas (corn or flour)

1 cup shredded lettuce

1 cup diced tomatoes

3/4 cup shredded cheddar or Monterey Jack cheese

1/4 cup chopped fresh cilantro

Lime wedges, for serving


Instructions

1. In a medium bowl, whisk together olive oil, lime juice, garlic, chili powder, paprika, cumin, salt, and pepper.

2. Add shrimp to the bowl and toss well to coat. Let marinate for 15–30 minutes.

3. Preheat grill or grill pan to medium-high heat. Lightly oil the surface.

4. Grill shrimp for 2–3 minutes per side, until pink, opaque, and lightly charred.

5. While shrimp grills, prepare toppings: shred lettuce, dice tomatoes, chop cilantro, and warm tortillas.

6. Assemble tacos by layering lettuce, grilled shrimp, tomatoes, cheese, and cilantro on each tortilla.

7. Squeeze fresh lime over the top and serve immediately with your favorite sauce if desired.


Notes

Don’t over-marinate the shrimp—30 minutes is plenty or the citrus may start to cook them.

Always pat shrimp dry before marinating to avoid excess moisture on the grill.

For extra flavor, char your tortillas over an open flame or hot skillet before assembling.
