Description

These Spicy Cheddar Jalapeño Cornbread Waffles bring the best of both worlds — the comforting texture of classic cornbread with a crispy, golden waffle twist, infused with sharp cheddar and zesty jalapeños. They’re perfect for brunch, breakfast-for-dinner, or served alongside chili and BBQ.


Ingredients

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 ½ cups buttermilk

2 large eggs

¼ cup melted butter

1 cup shredded sharp cheddar cheese

1 fresh jalapeño pepper, finely chopped

2 tablespoons chopped chives or green onions (optional)


Instructions

1. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.

2. In another bowl, beat eggs, then mix in buttermilk and melted butter.

3. Pour the wet mixture into the dry ingredients and stir gently until combined.

4. Fold in shredded cheddar, chopped jalapeños, and chives or green onions if using.

5. Preheat your waffle iron and grease it lightly with nonstick spray or butter.

6. Pour the batter into the hot waffle iron and cook 4–5 minutes until golden and crispy.

7. Remove waffles and serve hot. Top with sliced jalapeños, hot honey, or your favorite brunch sides.


Notes

For crispier edges, use medium-ground cornmeal and cook until deep golden brown.

Remove jalapeño seeds for milder heat or add more for extra spice.

Let the batter rest 5 minutes before cooking for fluffier waffles.
