Ripe Bananas

Crushed Pineapple (with juice)

Chopped Pecans

All-Purpose Flour

Granulated Sugar

Brown Sugar

Vegetable Oil

Eggs

Vanilla Extract

Ground Cinnamon

Baking Soda

Salt

Cream Cheese

Butter

Powdered Sugar


Instructions

  1. Preheat oven to 350°F (175°C). Grease three 9-inch round cake pans.
  2. In a bowl, mash bananas and drain pineapple slightly. Toast chopped pecans if desired.
  3. In a large bowl, whisk oil, eggs, sugars, vanilla, bananas, and pineapple until smooth.
  4. In a separate bowl, sift flour, baking soda, salt, and cinnamon.
  5. Gradually add dry mix to wet ingredients. Fold in pecans.
  6. Divide batter into pans and bake 25-30 minutes. Cool in pans 10 minutes, then on racks.
  7. Beat cream cheese and butter. Add powdered sugar and vanilla until smooth.
  8. Frost cooled cake layers and decorate with pecans or pineapple.
