Description

These Softest Peanut Butter Cookies are ultra-tender, chewy, and rich in peanut butter flavor. With a criss-cross top and golden edges, they stay soft for days and are the perfect treat with a glass of milk or crumbled into your favorite dessert.


Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 and 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt


Instructions

1. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

2. Add in the peanut butter, egg, and vanilla extract. Mix until smooth and fully combined.

3. In a separate bowl, whisk together the flour, baking soda, and salt.

4. Gradually add the dry ingredients to the wet ingredients. Mix just until the dough forms.

5. Chill the dough in the refrigerator for 30 minutes (optional but recommended).

6. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

7. Scoop 1-tablespoon portions of dough and roll into balls. Place on baking sheet.

8. Use a fork to press a criss-cross pattern on each cookie, flattening slightly.

9. Bake for 9–11 minutes or until the edges are set and the centers are still soft.

10. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.


Notes

For extra soft cookies, don’t overbake—pull them from the oven when they still look slightly underdone in the center.

Chilling the dough improves texture and helps prevent spreading.
