1 tablespoon sugar

Marshmallow fluff

Instructions
- Cook sushi rice according to package instructions.
- While still warm, stir in sugar and vanilla extract. Let cool to room temperature.
- Lay parchment or plastic wrap on a flat surface.
- Spread cooled rice into a 1/4-inch thick rectangle.
- Spread a line of marshmallow fluff across the center.
- Sprinkle crushed graham crackers over the fluff.
- Roll the rice tightly into a log using the wrap to assist.
- Refrigerate for 15–20 minutes.
- Slice into sushi-sized pieces with a damp, sharp knife.
