Ingredients
3 pounds chuck roast
3 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon onion powder
1 teaspoon garlic powder
6 slices provolone cheese
4 French baguettes or hoagie rolls
Fresh parsley (optional, for garnish)
Salt and pepper to taste
1 tablespoon vegetable oil (for searing)
Instructions
1. Pat the chuck roast dry and season with salt and pepper.
2. Heat oil in a skillet over medium-high heat. Sear the roast on all sides until browned.
3. Place the roast in the slow cooker. Add beef broth, Worcestershire sauce, soy sauce, onion powder, and garlic powder.
4. Cover and cook on low for 8 hours or high for 4–5 hours, until the meat is fork-tender.
5. Remove the roast from the slow cooker and shred with two forks. Skim fat from the broth if needed.
6. Preheat oven broiler. Slice baguettes or rolls and fill with shredded beef.
7. Top with provolone cheese and broil until the cheese melts and starts to bubble.
8. Serve sandwiches with warm au jus on the side for dipping. Garnish with fresh parsley if desired.
Notes
Toasting the bread before assembling helps prevent sogginess.
For extra richness, add a splash of red wine to the broth before cooking.
Leftovers can be frozen—store the beef and au jus separately for best results.
