Description

Ingredients
3–4 lb chuck roast
4 cups beef broth
2 tablespoons Worcestershire sauce
1 large onion, sliced
4 garlic cloves, minced
6 hoagie rolls or sandwich baguettes
6 slices provolone or Swiss cheese
1 teaspoon Italian seasoning or 2 sprigs fresh thyme (optional)
Instructions
1. Sear the chuck roast in a hot skillet with a little oil until browned on all sides (optional but recommended).
2. In the slow cooker, add the sliced onion, garlic, beef broth, Worcestershire sauce, and seasoning. Place the roast in the broth.
3. Cook on low for 8 hours or high for 4–5 hours, until the beef is fall-apart tender.
4. Transfer the beef to a cutting board and shred it with two forks. Return the beef to the slow cooker to soak in the juices.
5. Toast hoagie rolls or baguettes until golden. Pile on the shredded beef and top with a slice of cheese.
6. Broil the sandwiches for 1–2 minutes until cheese is melted and bubbly.
7. Serve with a small bowl of the cooking broth (au jus) for dipping.
Notes
Toasting the bread before assembling the sandwich helps prevent sogginess from the juicy meat.
For the most flavorful au jus, don’t skip the Worcestershire sauce—it adds deep richness.
The sandwich tastes even better the next day as the beef continues to absorb the broth.
