Description

Slow Cooker Corned Beef is the ultimate comfort food — tender, flavorful brisket slow-cooked with potatoes, carrots, and cabbage, all soaking up a rich, savory broth. Perfect for a cozy dinner or St. Patrick’s Day celebration.


Ingredients

1 corned beef brisket (about 34 pounds)

1.5 pounds yellow potatoes, halved 4 large carrots, cut into chunks

1 small head cabbage, quartered 1 onion, sliced 4 garlic cloves, smashed 4 cups beef broth or water

1 seasoning packet (comes with brisket)


Instructions

  1. Peel and cut the carrots, halve potatoes, quarter the cabbage, slice the onion, and rinse the corned beef brisket.
  2. Place onion and garlic at the bottom of the slow cooker.
  3. Lay brisket on top, fat side up.
  4. Add carrots and potatoes around the meat.
  5. Pour in beef broth or water to cover brisket.
  6. Sprinkle seasoning packet over the top.
  7. Cook on low for 8-10 hours or high for 4-6 hours.
  8. Add cabbage wedges for the last 2 hours.
  9. Remove brisket, slice against the grain, and serve with veggies and broth.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

To reheat, gently warm slices in broth on the stovetop or microwave to keep them moist.

Try adding parsnips, turnips, or sweet potatoes for variety.
