Ingredients
1 corned beef brisket (about 3–4 pounds)
1.5 pounds yellow potatoes, halved 4 large carrots, cut into chunks
1 small head cabbage, quartered 1 onion, sliced 4 garlic cloves, smashed 4 cups beef broth or water
1 seasoning packet (comes with brisket)
Instructions
- Peel and cut the carrots, halve potatoes, quarter the cabbage, slice the onion, and rinse the corned beef brisket.
- Place onion and garlic at the bottom of the slow cooker.
- Lay brisket on top, fat side up.
- Add carrots and potatoes around the meat.
- Pour in beef broth or water to cover brisket.
- Sprinkle seasoning packet over the top.
- Cook on low for 8-10 hours or high for 4-6 hours.
- Add cabbage wedges for the last 2 hours.
- Remove brisket, slice against the grain, and serve with veggies and broth.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
To reheat, gently warm slices in broth on the stovetop or microwave to keep them moist.
Try adding parsnips, turnips, or sweet potatoes for variety.
