1 can white beans drained and rinsed
1 can black beans drained and rinsed
1 can diced tomatoes with green chiles
1/2 cup chopped onion 3 cloves garlic minced
1 packet ranch seasoning mix
1/2 cup chicken broth
8 oz cream cheese cubed
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
- 1. Add chicken breasts to the bottom of the slow cooker.
- Pour in white beans, black beans, diced tomatoes with green chiles, onion, garlic, and ranch seasoning. Add buffalo sauce and chicken broth, then gently stir.
- Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours.
- Remove chicken, shred with two forks, and return to the slow cooker.
- Add cream cheese cubes and stir until melted and fully combined.
- Cook for an additional 15 minutes, then serve hot with desired toppings.
Notes
Use chicken thighs instead of breasts for a richer flavor and juicier texture. Adjust the heat level by choosing mild or hot buffalo sauce based on your preference. If the chili becomes too thick, add a splash of chicken broth when reheating.
