A melt-in-your-mouth brisket slow-cooked to perfection and served with a rich, tangy balsamic gravy. This comforting dinner is simple to prepare and packed with savory depth.

3 to 4 lb beef brisket (flat cut preferred)
2 yellow onions, sliced
4 garlic cloves, minced
1 1/2 cups beef broth
1/4 cup balsamic vinegar
2 tbsp Worcestershire sauce
2 tbsp brown sugar
1 tsp dried thyme
Salt and black pepper to taste
1 tbsp cornstarch + 2 tbsp water (for slurry)
Instructions
- Season brisket with salt and pepper. Sear on all sides in a hot skillet until browned.
- Layer sliced onions and garlic at the bottom of the slow cooker.
- In a bowl, whisk together beef broth, balsamic vinegar, Worcestershire sauce, and brown sugar. Pour over the onions.
- Place brisket on top, sprinkle with thyme.
- Cover and cook on low for 8–10 hours until fork-tender.
- Remove brisket and let rest. Strain cooking liquid into a saucepan.
- Mix cornstarch with water and whisk into the liquid over medium heat until thickened.
- Slice brisket against the grain, serve with gravy.
