Ingredients

3 to 4 lb beef brisket (flat cut preferred)

2 yellow onions, sliced

4 garlic cloves, minced

1 1/2 cups beef broth

1/4 cup balsamic vinegar

2 tbsp Worcestershire sauce

2 tbsp brown sugar

1 tsp dried thyme

Salt and black pepper to taste

1 tbsp cornstarch + 2 tbsp water (for slurry)


Instructions

  1. Season brisket with salt and pepper. Sear on all sides in a hot skillet until browned.
  2. Layer sliced onions and garlic at the bottom of the slow cooker.
  3. In a bowl, whisk together beef broth, balsamic vinegar, Worcestershire sauce, and brown sugar. Pour over the onions.
  4. Place brisket on top, sprinkle with thyme.
  5. Cover and cook on low for 8–10 hours until fork-tender.
  6. Remove brisket and let rest. Strain cooking liquid into a saucepan.
  7. Mix cornstarch with water and whisk into the liquid over medium heat until thickened.
  8. Slice brisket against the grain, serve with gravy.
