Ingredients
2 large eggs
1 cup milk
4 tablespoons butter, melted
1 can (15 oz) whole kernel corn, drained
1 can (14.75 oz) creamed corn
2 tablespoons sugar
0.5 teaspoon salt
0.25 teaspoon black pepper
0.25 cup cornmeal or crushed crackers (optional, for topping)
Instructions
1. Preheat oven to 350°F (175°C). Grease a medium casserole dish.
2. In a large bowl, whisk eggs, milk, and melted butter until smooth.
3. Stir in drained whole kernel corn and creamed corn.
4. Add sugar, salt, and pepper; mix gently to combine.
5. If using cornmeal or cracker crumbs, stir half into the mixture.
6. Pour the mixture into the prepared dish and sprinkle with the remaining topping.
7. Bake uncovered for 45–50 minutes until the center is set and top is golden.
8. Let rest 5–10 minutes before serving.
Notes
For a cheesy twist, add ½ to 1 cup of shredded cheddar or pepper jack to the mixture.
Make it gluten-free by using GF-certified cornmeal or crackers.
