1/4 teaspoon red pepper flakes
2 cans butter beans, drained and rinsed
3/4 cup vegetable broth
3/4 cup heavy cream
1/2 cup grated parmesan cheese
2 cups baby spinach
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh basil
Instructions
1. Melt the butter in a large skillet over medium heat.
2. Add the garlic, sun dried tomatoes, Italian seasoning, and red pepper flakes, then cook for 1 minute until fragrant.
3. Stir in the butter beans and vegetable broth, then simmer for 4 to 5 minutes.
4. Reduce the heat to low and pour in the heavy cream.
5. Stir in the parmesan cheese until the sauce is smooth and creamy.
6. Add the baby spinach and stir until wilted.
7. Season with salt and black pepper.
8. Finish with fresh basil and serve warm.
Notes
Use good quality parmesan for the smoothest, richest sauce.
Add a splash of extra broth when reheating to loosen the sauce.
Serve with crusty bread, rice, or pasta to make the meal even more filling.
