Description

These golden, cheesy, stuffed breakfast bombs are a delicious grab-and-go option for busy mornings. Filled with creamy scrambled eggs, crispy bacon or sausage, and gooey cheddar cheese, they bake up beautifully and store well for meal prep too!


Ingredients

Scale

1 can refrigerated biscuit dough (8 biscuits)

6 large eggs

2 tablespoons milk

1 cup shredded sharp cheddar cheese

1 cup cooked crumbled bacon or sausage

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons melted butter (for brushing)

1 tablespoon chopped parsley (optional garnish)


Instructions

1. In a nonstick skillet, scramble eggs with milk, salt, and pepper over medium heat until just set.

2. Stir in the cooked bacon or sausage. Remove from heat and let cool slightly.

3. Mix in the shredded cheddar cheese with the egg mixture.

4. Flatten each biscuit dough round into about 4-inch circles.

5. Spoon egg mixture into the center of each circle.

6. Pull dough edges over filling and pinch tightly to seal. Place seam-side down.

7. Arrange on a parchment-lined baking sheet.

8. Brush the tops with melted butter.

9. Bake at 375°F (190°C) for 15–20 minutes or until golden brown.

10. Optional: brush again with melted butter and sprinkle with parsley.

11. Serve warm or store for later.


Notes

Let the filling cool slightly before adding cheese to prevent it from melting too soon.

Avoid overfilling the dough to keep the seams from splitting.

Reheat in the oven or air fryer to keep them crisp rather than microwaving.
