Ingredients
450 g beef cubes
340 g linguine pasta
4 tbsp butter
4 cloves garlic, minced
240 ml heavy cream
60 g Parmesan cheese, grated
2 tbsp olive oil
2 tbsp fresh parsley, chopped
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain, reserving 1 cup of pasta water. Toss linguine with olive oil to prevent sticking and set aside.
2. Pat beef cubes dry and season with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear beef cubes 1–2 minutes per side until browned. Remove and set aside.
3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté 30 seconds until fragrant.
4. Stir in heavy cream, then add Parmesan cheese. Whisk until smooth. Add a splash of reserved pasta water if sauce is too thick.
5. Toss cooked linguine in the sauce until coated. Return beef to skillet, letting juices mix with the pasta.
6. Garnish with fresh parsley and serve immediately.
Notes
For maximum tenderness, avoid overcooking the beef—keep it medium or medium-rare.
Reserve pasta water before draining; it’s the key to adjusting sauce consistency.
Freshly grated Parmesan melts better and gives the sauce a smoother texture.
