Description

Crispy on the outside and juicy inside, these Savory BBQ Boneless Chicken Bites are coated in a sticky-sweet barbecue glaze that packs bold, smoky flavor in every bite. Ideal for parties, game days, or a quick dinner fix!

1.5 pounds boneless, skinless chicken thighs or breasts, cut into 11.5 inch pieces

1 cup buttermilk

1 large egg

3/4 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

Vegetable or canola oil for frying

3/4 cup BBQ sauce (homemade or store-bought)

2 tablespoons brown sugar (if using homemade BBQ sauce)

1 teaspoon hot sauce (optional)

2 tablespoons chopped chives or parsley for garnish (optional)


Instructions

1. Cut and Marinate the Chicken: In a bowl, whisk together the buttermilk and egg. Add chicken pieces and marinate for at least 30 minutes, or up to 4 hours in the fridge.

2. Prepare the Coating: Mix flour, cornstarch, paprika, garlic powder, salt, and pepper in a shallow dish. Dredge each chicken piece in the flour mixture to coat evenly.

3. Fry the Chicken: Heat oil to 350°F in a deep pan. Fry chicken in batches for 4–6 minutes until golden and cooked through. Drain on paper towels.

4. Make the BBQ Glaze: If using homemade sauce, heat BBQ sauce, brown sugar, and hot sauce in a small saucepan until slightly thickened and warm.

5. Toss and Serve: Place fried chicken in a large bowl. Pour BBQ sauce over and toss until evenly coated. Garnish with chopped chives or parsley.


Notes

Marinate longer for maximum tenderness and flavor.

Don’t overcrowd the frying pan—this keeps the oil temperature stable for crispy bites.

Toss in warm sauce just before serving to maintain crunch.
